HEADS UP! Monday, September 8, Route 49 will be CLOSED in both directions at the CSX Rail Road crossing in Central Square. This around-the-clock closure is necessary to facilitate CSX Rail Road’s reconstruction of that crossing. This closure is anticipated to remain in place until 5 p.m. Thursday, September 11. I-690 westbound traffic on I-690 has shifted into a single lane from Onondaga Creek (east of the West Street interchange) to the I-690 bridge over the CSX Rail Road, located east of the Fairgrounds. One of the most well known natural attractions on Oahu is Diamond Head crater. It's just under a mile to the summit. Guides say it's a 30 minute hike! HA! WE CLIMBED IT!!!! There is a path and it took us about an hour and a half but gosh darn it, we climbed it! Here's the view It's
More than 3,500 feet in diameter with a 760-foot summit, Diamond Head in Waikiki is perhaps the world’s most recognized volcanic crater. It is a lasting remnant of a volcanic explosion that occurred about 500,000 years ago. Ancient Hawaiians called it Laeahi, which translates to "brow of the tuna." The name "Diamond Head" can be traced to the 1800s, when British sailors mistakenly thought there were diamonds lodged in the crater’s soil. The "diamonds" turned out to be calcite crystals embedded in the lava rock.

The Island of Oahu is beautiful. There are a lot of things to see and do. Honolulu is the big city on this Island. It's actually the 11th largest city in the country! I didn't know that. It's very metropolitian. Here's the coastline from the ocean looking in. We're staying in Waikiki Beach which is on the southeast tip of the Island. The view from here is amazing. The sun rises over the mountains. And sets over the ocean I can actually see both from my balcony! The major attraction on Oahu is, of course, Pearl Harbor. It's a very moving tour. Very humbling. Very Sad. So many lost so quickly and so young. The monuments are awsome. There's still so much to do.....
Aloha everyone! I am Jerome D. Gnome and we are finally in beautiful, sunny Hawaii! It was not an easy trip, believe me, but that’s a story I’ll share a bit later. Let me start by saying that internet access is not as common here as it is on the mainland and, if you thought Road Runner was expensive in Syracuse, well let’s just say we have it easy compared to our Hawaiian neighbors! Okay, so here’s the travel gang. Our first full day was spent in Hilo on the Big Island exploring the volcanoes. We were able to walk on lava and see an actual eruption. Here’s a peek.
The next chance I get I’ll tell you all about the nightmare that was our trip here. Here’s a preview. What started out as a semi-direct flight from Syracuse to Chicago to Honolulu with a quick puddle-jump trip to Hilo ended up as a 24 hour nationwide tour with stops in Chicago, Dallas and Los Angeles with an unscheduled overnight stay (at an airport Best Western) in Honolulu and an early morning puddle jump to Hilo. Yikes!

We recently celebrated PoKitty's 7th birthday with a group of friends. I don't actually need a reason to throw a party but having one is always nice! We invited about 30 people for dinner and drinks. You may think throwing a party for a pet is a little odd but pet parties are actually a pretty popular thing right now. So here we go with Part Two of Entertaining on a Budget!
I decided to go with a buffet to save time and money. The menu was Sliced Beef, Fra Diavalo, Italian Greens, Roasted Baby Red Potatos and Artichoke and Roasted Red Pepper Salad (recipes below). All of the decorations, plates, napkins, gift bags, etc., came from the dollar store. I threw a party for 30 for less than $3 per person. Here's the run down:
Decorations. I think decorations are a must for any party. It shows your guests that you went that extra mile and puts everyone in a festive mood. A few plastic tablecloths, party plates and napkins, a few balloons and little gift bags with assorted candy. Total cost $18
The Menu. I bought a shoulder round roast (10lbs) cooked it rare, sliced it myself and made some homemade rolls for sandwiches. Three pounds of mini penne pasta and two pounds of frozen shrimp for the Fra Diablo, four pounds of baby red potatoes, escarole, proscutto, onions and peppers for the Italian greens, artichoke hearts, roasted red peppers and romaine lettuce hearts for the salad. Total cost $53

Recipes:
Fra Diavalo: One Pound of Pasta (Spagetti or mini penne works best) 1/2 pound of cleaned and peeled shrimp One can (12oz) of diced tomatos One Medium Onion One Clove of Garlic One Tbsp of Crushed red pepper Once cup of dry White Wine 1/2 cup of lemon juice 1/2 cup of Olive Oil Salt and Pepper 2 Tbsps Chopped Fresh Parsley
In a hot skillet, sear shrimp in 2 tablespoons of olive oil (about one minute on each side). Remove shrimp and set aside. In same skillet, lower heat to medium. Add rest of olive oil and onions. Saute onions until softened. Add garlic and crushed red peppers. (if you don't like spicy food, use less crushed red peppers or leave them out). Add tomatos with juice (don't drain), white wine, lemon juice and salt and pepper to taste. Let simmer about 20 minutes. Liquid should reduce by half. Cook pasta. After liquid reduces by half, re-add shrimp, cook 5 more minutes and pour over pasta. Add fresh parsley and serve. Recipe serves four. Note: Cooking with wine. The number one rule is 'if it's good enough to drink, it's good enough to cook with'. If you don't like the taste of a wine in a glass, you're not going to like the taste in your food.
Italian Greens One pound escarole 1/4 pound of proscutto 2 shallots 6 cloves of garlic 1/4 cup chopped banana peppers 1/2 seasoned bread crumbs 1/2 cup of grated cheese 1/2 cup extra virgin olive oil salt and pepper
Chop up the escarole and cook in a pot with half beef or chicken stock and half water. About 6 cups total. Bring to a boil and the lower heat. Add 4 whole cloves of garlic and salt. Let simmer for about an hour, until greens are soft (like cooked spinach). Drain well and remove whole garlic. In a skillet add two Tbsps of olive oil and saute shallots, two cloves minced garlic, proscutto and banana peppers until lightly browned. Add mixture to escarole. Add bread crumbs and grated cheese (I like pecorino but parmesan in fine). Mix well with spoon. Add the rest of the olive oil and place in a casarole dish. Bake for 20 minutes at 425 degrees. Serves 4-6.
